A thick slice of levain, toasted until the crust fractures cleanly. Serve with cold butter and nothing else.
Dense Danish rye needs less time than you think. Set the dial at 4, spread honey while warm, finish with flaked salt.
Split and set face-down. The wide slots accommodate most bagels without forcing. Use the bagel setting if yours has one.
The sugars in fruit bread burn faster. Keep the dial low, watch the lever, and pull early. Best served with a sharp cheddar.
Three things worth knowing.
Cold bread straight from the refrigerator will toast unevenly. Let it come to room temperature for ten minutes first. The moisture content changes the conductivity and your dial setting will underperform by one shade.
Once you find your setting for a bread, it will repeat. The quartz timer holds to within two seconds on every cycle. Write your preferred shade on a card inside the cabinet. The consistency is the point.
Slide it clear of the chassis, rinse under cold water, dry with a cloth, replace. It takes forty seconds. A clean tray prevents smoke at higher settings and keeps the element performing at full efficiency.
